{"id":723,"date":"2020-10-29T10:14:24","date_gmt":"2020-10-29T16:14:24","guid":{"rendered":"https:\/\/www.elasticworkout.com\/wpblog\/?p=723"},"modified":"2020-10-30T05:09:06","modified_gmt":"2020-10-30T11:09:06","slug":"cashew-and-apricot-crumble","status":"publish","type":"post","link":"https:\/\/www.elasticworkout.com\/wpblog\/cooking\/cashew-and-apricot-crumble\/","title":{"rendered":"Cashew and Apricot Crumble"},"content":{"rendered":"<p>Apricot season is coming and what much better time of the year than now to get this Almond and Apricot Crumble.<\/p>\n<h2>Ingredients:<\/h2>\n<h3>For the topping:<\/h3>\n<ul>\n<li>1\/2 cup all-purpose flour<\/li>\n<li>1 cup rolled oats<\/li>\n<li>1\u20442 cup brown sugar<\/li>\n<li>1\u20444 tsp. salt<\/li>\n<li>1 tsp. ground ginger<\/li>\n<li>1\u20442 tsp. ground cinnamon<\/li>\n<li>8 Tbs. cold unsalted butter, cut into 6<br \/>\npieces<\/li>\n<li>1 cup sliced almonds<\/li>\n<\/ul>\n<h3>For the filling:<\/h3>\n<ul>\n<li>3\/4 cup granulated sugar<\/li>\n<li>2 Tbs. quick-cooking tapioca or cornstarch<\/li>\n<li>1 tsp. peeled and grated ginger<\/li>\n<li>Salt<\/li>\n<li>2 1\/2 lb. apricots,\u00a0 diced<\/li>\n<\/ul>\n<p>Preheat to 350\u00b0F. Grease a 12-inch oval or 9-by-13-inch rectangular baking dish.<\/p>\n<p>Making the topping, in a bowl, stir together the flour, oats, brown sugar, salt, ground ginger and cinnamon. Using a pastry blender or 2 knives, quickly cut the butter into the flour mixture until it is crumbly. Add the almonds and toss to mix. Cover and refrigerate while you continue.<\/p>\n<p>To make the filling, in a small bowl, stir together the granulated sugar, tapioca, fresh ginger and salt. Place the apricots in a large bowl, sprinkle with the sugar mixture and toss to distribute. Spread the apricot mixture in the prepared baking dish. Sprinkle the topping evenly over the apricots.<\/p>\n<p>Bake until the topping is crisp and golden brown and the apricot filling bubbles, about 50 minutes.
